About Carmine's Pizza & Italian Take Out

Carmine’s is a small, family-owned takeout restaurant in Durham that draws praise for its thin, New Haven–style crust and a tomato sauce that reviewers call balanced and savory.

The kitchen turns out quick, thoughtfully made pizzas alongside panini, grinders and baked Italian staples, and the owner Heath is noted for his hands-on presence and friendly service.

The storefront is casual and efficient: mostly carryout with a narrow counter, a handful of stools and outdoor picnic tables where locals and beachgoers pause for a fast, satisfying meal.

Catering and frozen pies sold in stores extend the kitchen’s reach beyond the counter.

Why Locals Love It

Frank Zocco ★★★★★

"I have a group of friends that meet monthly to stay in touch while enjoying pizza. This month the Slice Mob met a Carmine’s Main St, Durham. Great pizza. I had the plain sauce with grated cheese. Sauce was perfect. Not sweet, nice tomato flavor and the crust was cooked to perfection. Nice char and crunch! I also got the house special ( sausage and mushrooms ) and I added cherry peppers. Excellent choice!!! Heath, the owner came to hang with us and we had a great conversation with him . He cooked us a few of his frozen pizzas for us to try. I have had them before and they are high on my list! He’s a great guy. Family owned definitely worth your time! Not a lot of place to sit, but they accommodated our group."

"This is a spot I make a habit to stop at after going to Hammonasett beach with the family as its right on the route from Middletown to Madison. I have tried alot of pizza in this county area and this is definitely so, far the best pizza within the Middlesex county. Able to contend with New Haven and be amongst the ranks of great pizza spots for CT. Service is great. Courteous and friendly. They can get busy but food is made fresh and in good reasonable time. Not really a sit down to eat restaraunt so look to get your stuff to go but they do provide a few tables to eat outside. Cheese pizza is classic, tasteful sauce and cheese combo and also taste great the next day as well. A hidden gem and surprised no social media critiques have ventured into this spot yet. I even have tried other stuff on menue and thier hot grinders are solid. Chicken parm, steak n cheese, egg plant parm, chicken cutlet👌🏾. There really is no other pizza spot up this way that I have tasted which can satisfy my craving for New Haven pizza except for this place. I wish they delivered to surrounding towns as I would order from here more often. Its about 15 minutes away from me but I would rather drive to pickup pizza from here than to order from a place that offers average style pizza. This place is worth it. Best you check it out yourself."

The Ancient Origins of Pizza

Before pizza became synonymous with Italian cuisine, its concept existed in ancient civilizations. The ancient Greeks and Egyptians had their versions of pizza-like flatbreads. Greek soldiers baked a type of flatbread called "plakous" topped with herbs, cheese, and garlic, whereas Persian soldiers during the 6th century BCE cooked flatbreads on their shields, topping them with cheese and dates. These primitive versions laid the groundwork for the culinary invention that would later capture the world.

The Tomato's Tumultuous Journey

The tomato, now a staple of pizza, was once met with suspicion upon its introduction to Europe. Brought from the Americas in the 16th century, tomatoes were initially thought to be poisonous by Europeans due to their association with the deadly nightshade family. However, by the 18th century, adventurous Neapolitans began using tomatoes on their flatbreads, transforming pizza into the beloved dish it is today. This risky culinary gamble paid off, forever changing the landscape of Italian cuisine.
