"**Outstanding Late-Night Pizza Experience** This place nails what New Haven pizza is all about. The pizza was exceptional - perfectly charred crust with that distinctive apizza style and fresh toppings. Despite a steady stream of customers flowing in late into the evening, the service remained friendly and efficient. What really impressed me was watching the constant flow of locals stopping by, many clearly regulars. The fact that people are still coming in late at night says everything about the quality. The staff handled the busy pace without missing a beat, maintaining high standards even during the late rush. If you're looking for authentic New Haven pizza with great service and that bustling local pizzeria vibe, this is definitely worth a visit."

"After hearing so much about Est, we finally had the chance to stop in, and I can see why New Haven locals love it so much. Classic, no-frills spot, with just delicious food. Loved the calzone, wings, and pizza. It’s nice to know there’s a spot that sells slices in New Haven too, since many of the pizzerias don’t, and that they’re open for late night. Nice selection of desserts too. They handled the volume of dine in and takeout well. We would definitely return!"

From Sicily to Detroit: The Rise of Pan Pizza

Pan pizza, with its thick, airy crust, finds its roots in both Sicilian and Detroit traditions. In Detroit, the pizza is baked in rectangular pans, inspired by automotive parts trays, with cheese edges caramelized to crispy perfection. This style contrasts sharply with thinner versions, offering a rich, hearty alternative that has gained popularity throughout the Midwest and beyond.

Hawaiian Pizza’s Canadian Roots

Despite its name, Hawaiian pizza was invented not in Hawaii but in Ontario, Canada, in 1962 by Sam Panopoulos. The Greek-Canadian restaurateur whimsically named it after the brand of canned pineapple he used. The combination of pineapple and ham sparked a sweet-and-salty trend that has both passionate fans and vocal critics, making it one of the most polarizing toppings in pizza history.
