The American Soldier's Role in Pizza's U.S. Popularity

Pizza's rise to popularity in the United States can be significantly attributed to returning World War II soldiers who developed a taste for the dish during their deployment in Italy. In the post-war boom of the 1950s, these soldiers helped spread the love for pizza beyond Italian-American enclaves, leading to the opening of numerous pizzerias and the birth of major pizza chains. This cultural shift transformed pizza from an ethnic specialty into an American staple, seen in iconic media appearances such as in episodes of 'I Love Lucy.'

"This was a great experience. The garlic bread bites had excellent texture and flavor. The mozzarella sticks are fresh made every day and are excellent. The pink vodka sauce was very flavorful. The pizza had a crispy bottom but a light airy top to the crust. Great sauce, plenty of cheese, and tasty meats. The server was very friendly and helpful. Back again and it was even better. My server Tina was over the top good."

"It was good. Chicken artichoke had a strong artichoke and lemon flavor but I liked it. Hubby had antipasto with a side of sausage. Garden salad was fresh. Mussels marinara was great but the chef should know better NOT to serve the ones that didn't open. One or two okay, but we had 5 in our serving."

Neapolitan vs. New York: A Tale of Two Crusts

While Neapolitan pizza is renowned for its thin, soft, and slightly charred crust cooked at high temperatures, New York-style pizza boasts a thicker, chewier base ideal for folding. Neapolitan dough typically uses minimal ingredients and is quick-fired in wood ovens, whereas New York pizzas are often crafted in coal or gas ovens, allowing for a variety of toppings. This divergence highlights the creativity within American pizza-making and showcases the adaptation of traditional techniques to local preferences.

Food Science

The Unrivaled Popularity of Pepperoni

Pepperoni is the king of pizza toppings in America, with surveys indicating that it adorns more than two-thirds of all pizzas ordered. This spicy sausage, an Italian-American innovation, is beloved for its perfect blend of salty and savory flavors. Interestingly, its name derives from the Italian word for bell peppers, 'peperoni,' which often confounds Italian visitors who might expect a different dish entirely.

From Ontario with Pineapple: The Hawaiian Pizza Story

Contrary to its name, Hawaiian pizza, featuring pineapple and ham, was concocted far from the tropics in 1962 by Sam Panopoulos in Ontario, Canada. This Greek-Canadian restaurateur's experiment with sweet and salty flavors became surprisingly popular, especially in North America and Australia. Despite sparking a global debate among pizza aficionados, this unconventional topping combination remains a staple for those who appreciate its unique taste.
